Jerk Chicken

  • 1 rotisserie chicken, skin removed and shredded
  • 2 tablespoons jerk seasoning
  • 2 teaspoons brown sugar
  • 2 tablespoons vegetable oil
  • 2 cups shredded cabbage
  • ¼ cup cilantro, chopped
  • 8, 6-inch flour tortillas
  • 1 lime, cut into wedges

  • ½ cup mayonnaise
  • 1 teaspoon jerk seasoning
  • 1 teaspoon hot sauce
  • ¼ teaspoon sugar


  1. Preheat 2 tablespoons of vegetable oil in a 12 Inch Cast Iron Skillet over medium heat, 4-5 minutes. Add pulled chicken and 2 tablespoons jerk seasoning. Mix well and cook 5 minutes.
  2. While chicken is cooking, combine sauce mixture and set aside.
  3. Wrap tortillas in a paper towel and microwave until hot, about 20 seconds. Assemble the tacos. Place jerk chicken onto heated tortilla, top with shredded cabbage, and drizzle with sauce. Garnish with cilantro and a squeeze of lime.
